I bet I could travel the world and find 1000 different versions of the classic Chicken Soup. Each twist will differentiate its food therapy focus, yet all of them will be extremely nourishing.

This Lemon Chicken Soup, inspired by the Greek cuisine, is not an exception. This soup will be both Golden Yin-Nourishing Broth and a Bright Qi Restorative.

Ingredients:

  • Olive Oil

  • 1 small onion

  • 1 garlic clove

  • 1 bay leaf

  • 1 medium carrot

  • 2 celery stalk

  • 1 chicken breast (approx. 150g)

  • 2 eggs

  • orzo or similar pasta (I used a gluten free version)

  • 300 ml of bone broth

  • 1 small lemon/lime

  • salt

  • pepper (of your choice)

  • 1 tsp of dill (fresh or dried)

Directions:

  1. In a pan heat the olive oil. Add the onion, garlic and bay leaf. Add a small amount of salt.

  2. Once golden add the carrot and celery. Add an extra small amount of salt. Cook it until tender.

  3. Add 1 + 1/5 cup of water and the chicken breast. Adjust the salt if needed. Bring to a boil and then lower the heat to low. Cover with a lid and simmer for 15 minutes.

  4. Take out the chicken breast and the bay leaf. Add the pasta and the bone broth and continue to cook.

  5. While the pasta cooks, shred the chicken.

  6. Whisk to eggs with lemon juice in a separate bowl.

  7. Once the pasta is cooked, add the shredded chicken and the eggs while stirring, so it mixes well.

  8. Stir the dill, and sprinkle with pepper. Adjust the seasoning if needed.
